Hatch Coffee is located in Markham, Ontario. They are a coffee company at heart, so they establish close relationships with coffee growers and importers of quality coffee
They work directly with farmers; they visit and meet the families behind the farm. They observe and ensure best practices are being followed, and help where they can. The farmers help them learn about how they farm coffee and Hatch shares knowledge with them of their experiences from traveling and meeting other coffee farms around the world. There are no middlemen. So for example, the farmers will deliver the coffee direct to their coffee factory in Toronto. It is then Hatch’s duty to carefully roast the coffee in a way that will highlight the particular notes of the coffee. They are essentially sharing more of the value chain with the farm.
Each coffee they select goes through an extensive selection process, from green coffee analysis, moisture content, sample roasting, to several cupping sessions, and flavour profiling. Did we mention they have 3 Q-Graders on the team.
Their roasting style is heavily influenced by Scandinavian style light roasts.
This allows them to showcase the flavour nuances of the coffee origin. “Coffee is a fruit, and we try our best to bring out the fruit notes in each cup”.
